Let’s get started with this journey!
The Essence of State Bitez
I’m Manisha- an all time foodie who loves to explore different regions through food. State Bitez started for the love of food and also the fact that in india every food tells us a story. I feel so amazed when a particular food’s aroma and taste is different in every state, there is always a number of different ways used to make the same dish. So, i thought of starting this new journey where food lovers/travellers can benefit from it. When we travel to a different place, we often miss out on the authentic food of that place. State Bitez is a one stop solution when it comes to Indian food.

Our First Location: West Bengal

We’re starting our love for food with West Bengal, a state known for it’s rich culture and varieties in food. Located in india West Bengal serves, spicy, sweet and subtle food creating a balance. A state where food is an emotion filled with multi course meal, love and warmth for all.
Here’s providing you with a small glimpse of what’s coming next in our detailed West Bengal feature:
Signature Dishes:
- Shorshe Ilish (Hilsa in mustard gravy) – Bengal’s delicacy made using hilsa fish in mustard paste. A very strong aroma with great taste.
- Macher Jhol – A curry made using seasonal vegetables and fish, a mix of light spices. It is paired best with hot steaming rice.
- Begun Bhaja – Brinjal slices shallow fried till crispy, often served with dal and rice.
- Puchka – Pani puri filled with potato masala and tangy water.
- Rosogulla & Mishti Doi – None of the Bengali meal is complete without sweets. Rosogulla is a soft, spongy goodness soaked in sweet syrup and mishti doi is sweet, fermented yoghurt.
Speciality Of Bengali Food
- Making use of mustard oil and seeds activates our tastebuds.
- A proper “course system” is followed even at home – starting with a bitter dish and ending with a sweet one.
- Indulgence in veg as well as non-veg food from shukto to chingri malai curry.
- Lastly, Bengal’s dominance in sweets.
In the next blog, we will go into the depth of West Bengal.

Every week, i’ll be diving into different different states, exploring foods. You can expect deep dives into:

Food unites us, so it would be best if you could share your best food experiences or maybe talk about which state’s food you’d want me to explore next. You could also share your food recipes which i could make at home and also tell me about your place’s best local food.
